邪道が最適解に化ける場所。チェンマイの氷入りビール

現在、タイのチェンマイにいる。

昔から、どうしても理解できないカルチャーがあった。

ビールに氷を入れて飲む、あのスタイルだ。

せっかく冷えたビールが薄まる。風味が死ぬ。
邪道中の邪道だと、根拠もなく決めつけていた。

その認識が、チェンマイ3日目で完全にひっくり返った。

試しに頼んでみたら、おいしい。

「悪くない」という妥協ではなく、「この国では、これしかない」という感覚だった。

なぜこんなに美味しいのか、少し考えてみた。

まず、温度の問題がある。

日中は35度を超え、夜になっても空気がじっとりと熱を持っている。キンキンに冷えたビールを出されても、5分もしないうちにぬるくなる。

氷を入れることは、味を薄めるリスク以上に、最後の一口まで冷たさをキープするための品質管理だった。

さらに調べると、シンハーやチャーンといったタイのローカルビールは、氷で少し薄まることも前提に、やや強めの味わいと炭酸で設計されているらしい。

だから溶けても間延びしない。
最後まで、すっきりとしたキレが残る。

もう一つ納得したのが、体への負担だ。

熱帯の気候でアルコールを飲むと、自覚のないまま水分が奪われていく。氷を入れることで、飲みながら自然に水分補給もできる。アルコールのペースも少し落ちる。

翌朝の体の軽さが、明らかに違った。

「健康的」という感覚が出てきたとき、自分でも少し笑ってしまった。

邪道だと思っていたものが、この環境では完全に合理的な最適解だった。

東京のバーでやれば、たしかに手抜きに見えるかもしれない。でも、チェンマイの夜市でやれば、それは過酷な気候を生き抜くために、現地の人たちが長い時間をかけて磨いてきた知恵になる。

「こうあるべき」という感覚は、意外とローカルだ。

ビールは冷えたグラスで飲むもの。その感覚は、日本の気候と文化の中では確かに正しかった。でも、別の環境に来た瞬間、その「べき」をそのまま持ち込むことでもない。

チェンマイの人たちは、別に「正しいビールの飲み方」に反旗を翻しているわけじゃない。この暑さで、この料理で、一番おいしく飲める方法を選んでいるだけだ。

正解は固定されていない。

場所が変われば、状況が変われば、邪道が最適解に化ける。

氷が少しずつ溶けていくグラスを眺めながら、もう一口飲んだビールが、とてもおいしかった。

Where the Wrong Way Becomes the Right Way: Ice in Your Beer in Chiang Mai.

I’m in Chiang Mai, Thailand right now.

There’s always been one drinking custom I simply could not understand.

Putting ice in your beer.

The beer is already cold. Ice just waters it down. Kills the flavor. I had written it off as completely wrong — and I had no real basis for thinking that.

On my third day in Chiang Mai, that assumption flipped entirely.

I ordered one out of curiosity. It was good.

Not “tolerable” — more like, this is the only way it makes sense here.

I thought about why for a moment.

Part of it is the temperature. Daytime highs push past 35 degrees, and even at night the air holds a thick, lingering heat. A perfectly chilled beer goes lukewarm in under five minutes. Adding ice isn’t about watering down the flavor — it’s quality control. A way to keep that last sip as cold as the first.

I looked into it a bit more and found that local Thai beers like Singha and Chang are apparently designed with this in mind — slightly stronger in taste and carbonation, on the assumption that some dilution will happen.

So even as the ice melts, the beer doesn’t fall flat. The crispness stays through to the end.

The other thing that made sense to me was how it sits in the body.

Drinking alcohol in tropical heat pulls water from you before you notice. With ice in the glass, you’re rehydrating a little as you drink. The pace of drinking slows down too.

I felt noticeably better the next morning.

When the word “healthy” crossed my mind, I caught myself smiling.

What I had written off as wrong turned out to be a perfectly rational solution for this environment.

Do it at a bar in Tokyo and it might look like laziness. Do it at a night market in Chiang Mai and it’s something different — a practice the locals refined over a long time, as a way to get through brutal heat.

The sense of how things “should” be is more local than we tend to think.

Beer should be served in a chilled glass. That felt true to me, and in Japan’s climate and culture, it probably was. But stepping into a different environment doesn’t mean carrying that “should” in unchanged.

The people of Chiang Mai aren’t pushing back against some correct way of drinking beer. They’re just choosing the method that tastes best — in this heat, with this food.

There’s no fixed right answer.

Change the place, change the circumstances, and what seemed wrong becomes the best option available.

I was watching the ice melt slowly in my glass, and took another sip. It tasted really good.
